Breakfast Bran Muffins
1 cup flour (preferably 100% stone-ground whole-wheat flour)
1 t. baking soda
1 ¼ cup bran
¼ cup wheat germ
3/4 cup raisins or date nugglets (Can use dried cranberries, sour cherries, apricot pieces, etc. or a combination of any of the above)
1 egg, well-beaten
½ cup molasses or honey
¾ cup milk
2 T. soft butter or shortening

Put together dry ingredients and raisins and moisten with egg and molasses or honey, milk, and shortening. Stir only enough to blend. Bake in well-greased muffins tins (or paper liners in tins) at 400º for 20 to 30 minutes. Can add ¼ cup pecan, walnut, or filbert meal for extra nutrition. Makes 12 muffins.

This is a great source of fiber!
